Coming soon: Vardo

This autumn get set for Caravan to open the doors of their first West London restaurant and newest concept, Vardo at the Duke of York Restaurant.

Named after the beautiful Romani vardo wagons of the 1800s, the restaurant is inspired by the notion of ‘no boundaries’, influenced by the journey of the travelling wagon spanning the globe and collecting produce, spices and inspiration along the way. Back-to-basics food will be brought to the forefront of the menu, showcasing low and slow cooking techniques, with carefully sourced ingredients from across the UK with a global influence.

To whet your appetite, expect delicious dishes such as slow braised carrots with brined mustard greens and aji blanco; charred aubergine with saffron buttermilk dressing and grilled turkish chilli; green baked eggs with lentil, pine nut and kale ragu and a mouth-watering dish of Baharat-rubbed lamb cutlets served with green harissa and tahini.

The architecturally award-winning designed building will have 360-degree wall-to-floor windows which will sink completely into the ground beneath you creating a whole new meaning to the phrase ‘bringing the outside in’ – the Square’s newest way to dine al-fresco.
