VARDO, the new nomadic all day dining concept from the team behind Caravan Restaurants, opened its doors in Chelsea on 23 September 2019.
The restaurant is housed within a state-of-the-art, architecturally designed, stone and glass pavilion, located in the heart of Duke of York Square. The circular structure boasts 360-degree wall to floor glazing that fully retracts into the floor – a UK first – allowing for a seamless indoor-outdoor experience.
At the heart of VARDO, which named after the beautiful Romani travelling wagons of the 1800s, is the idea of ‘no boundaries’, a concept influenced by the notion of spanning the globe collecting produce, spices and influence along the way.
An evolution of the ‘well-travelled’ food and drink ethos showcased in the first five Caravan sites across the capital, VARDO’s menu brings ‘back-to-basics’ food to the forefront, highlighting low and slow cooking techniques combined with an emphasis on plant based, healthy and nourishing options. Dishes include, ‘Low braised carrots, brined mustard greens, aji blanco’, ‘Charred aubergine, saffron buttermilk dressing, grilled Turkish chilli’ and ‘Shitake donburi, red cabbage, avocado, carrot, smashed cucumber, brown rice, furikake’.
The bar, which wraps around the centre of the building, will offer local beers, as well as wines and drinks inspired by the sensory journey of the silk road, and spices sourced from east to west. Cocktails will take influence from Rajasthan and Northern India, through Russia and down to Northern Africa, the Mediterranean and onto Central Europe.
